Gifts in a jar - Apple Spice Raisin MuffinsWith Christmas right around the corner, shopping and gift giving is on the minds of many.  We prefer handmade gifts in our family.  There is something so special about a gift that is not only extremely practical and useful, but also the thought that someone near and dear to you tailored a specific gift just to meet a need in your life.  Or make your life a tad bit easier.

That’s where gifts-in-a jar come in …

I love getting gifts that are edible and make getting breakfast on the table easy in just a few short steps.  Or letting the kids dump a jar of cookie mix into the mixer and adding a stick of butter for some quick, delicious, homemade cookies.

The gift I’ll be giving this year? … Apple Spice Raisin Muffins! These delicious gems are a slight modification of my popular Apple Pie Muffins recipe.

Apple Spice Raisin Muffins

Ingredients:

  • 1/3 cup brown sugar or rapadura
  • 3 cups blanched almond flour
  • 1 1/2 teaspoon apple pie spice
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup raisins

 

Assembly Instructions:

  1. In a quart jar layer the sugar on bottom, tap to make sure it’s all level.
  2. Next add the almond flour, tap the jar a few times to ensure everything is level and packed.
  3. Mix the baking soda, salt, and apple pie spice together in a small bowl, this ensures that it is all the same color to represent a uniform layer.  Add this to the jar and smooth to create a thin layer.
  4. Add the raisins to the jar, using a spoon press them firmly into the jar.
  5. Cap with a lid and tie a pretty bow with instructions onto the jar.

Apple Spice Raisin Muffins {gluten-free, dairy-free}

You will need:

  • 1 cup applesauce
  • 2 eggs
  • 2 tablespoons coconut oil, melted
  • 2 teaspoons vanilla
  • 1 teaspoon lemon juice
  1. In a large bowl combine the above ingredients and whisk until ingredients are mixed well and smooth.
  2. Add the jar mix and stir just to combine ingredients.
  3. Fill lined muffin tin with batter 2/3 full.
  4. Bake at 350 for 25-30 minutes or until done.

Have a favorite family recipe you want to put in a jar?

Convert your own favorite recipes for gifts in a jar.  Layer all of the dry ingredients in a jar.  Make a list of the wet ingredients for the recipient to add later with instructions on how to assemble the recipe.  When layering ingredients put the heavier ingredients on bottom.  Sugar is heavier than flour, so layer that on the bottom.  Put your add-in’s like raisins and chocolate chips on top as flour would sift through them and they would become hidden over time.
